Perfect meal on the go or snack

Makes 10 muffins

1 capsicum

2 handfuls spinach, chopped

1 cup zucchini, grated

1 red onion, finelt chopped

3 cloves garlic, grated or finely chopped

1/2 tsp paprika

8 large free range eggs

pinch of chilli flakes (to taste)

Preheat oven 180 degrees Celsius

Line 10 muffin tray with baking paper or muffin wrap of choice.

Divide capsicum, spinach, zucchini, onion and garlic evenly in the tray.

In a separate bowl whisk eggs and spices and garlic and stir.

Pour egg mixture evenly into muffin tray.

Bake for 10-15 minutes ir until a toothpick comes out clean.

(You can swap veggies, for your favourite ones).
