500g strawberries (leaves sliced off)
1 large banana (sliced into thin discs)
1 can coconut cream (chilled 1-3 days prior)
1 tsp vanilla
1 tbsp maple syrup (optional)

Open coconut can and gently scoop out solidified cream, separating from coconut water and place into chilled bowl.
Add vanilla and maple syrup to cream.
Use hand beater or stand mixer, whip on high speed until soft peaks form.
Stand aside in fridge.
Slice a disc off each strawberry (3/4 from tip).
Using a butter knife ice bottom of strawberry disc with whipped cream (same layer as banana slice).
Place banana slice on top of cream, place tip of strawberry on top of banana, to make them stick.
(Optional) Pipe a small tip of cream onto top of strawberry to resemble pompom on Santa’s hat.
