120g lamb mince
1 clove garlic, crushed
¼ tsp oregano
30g plain Jalna yoghurt
40g grated Lebanese cucumber
½ clove garlic, crushed
50g cherry tomatoes
40g grated cucumber
1 tbsp fresh mint leaves, finely chopped
7.5ml lemon juice
2 tsp sunflower oil
Mix together all ‘meatball’ ingredients, roll into little balls, and fry in a pan on medium to high heat. Set aside.
Mix all ‘dressing’ ingredients together. Set aside.
Halve cherry tomatoes and grate cucumber. Mix lemon juice and oil together, add mint leaves, and pour over tomatoes and cucumber salad.
Serve meatballs with dressing and salad (dressing either poured over meatballs or use as dipping sauce).
